Lanell Mace’s Enchilada

  • 2 lbs ground beef
  • 1 large can chili (no beans)
  • 2 lbs grated American cheese
  • 1 medium onion (chopped)
  • corn tortillas (about 15)

Brown ground beef and season to taste with salt and pepper.  Heat chili in medium-size pan on low heat.  Dip tortillas in chili to coat (that’s the messy part).  Place a small amount of beef, onion and cheese in shells then roll up and place in greased baking dish.  Top with remaining chili then cheese.  Bake 30 minutes in 350° oven.  Serve with salad and hot sauce.
